How to get there

Start by visiting the brewery of Matsumoto Craft Soy Sauce, whose soy sauce brews have been passed down for 250 years since the Edo period. Designated as an Important Architectural Structure of Kawagoe City, the soy sauce brewery houses rows of large wooden barrels that fill the air with the aroma of soy sauce.

Next is the Todoroki-ya Dried Foods Store, where you'll enjoy tastings of soup stock made from three essential Japanese umami ingredientsーshiitake mushrooms, bonito flakes, and kelp. Indulge in these exquisite flavors and aromas while learning about dashi from the guide with easy-to-understand flip charts and models.
